The family’s fourth-generation chef, Maximilian Irsara may be young, but he’s got plenty of experience under his belt, which he complements with the generational knowledge passed down from father to son. One he cherishes like that precious treasure it is. He loves first courses, and cooks them for our guests, too, and risottos, which his grandfather taught him to make when he was still a kid. Trying is believing.

In his spare time he volunteers as a firefighter, or will head up to the Gardenaccia hut, below the mountain, to meditate about the delicious meals he’ll cook. And in winter, he skis to his heart’s content.
